Crispy Blue Duck
• 5-6 lb. duck (or a roasting chicken)
• 1 orange, quartered
• 1 bottle Wild Blue Yonder
Preheat oven to 350 degrees F. Rinse Duck inside and out. Dry cavity and place 1/4 cup Wild Blue Yonder and orange quarters in cavity. Place on rack in roasting pan, breast side up in preheated oven. Roast for approximately 2 1/2 to 3 hours, basting every 30 minutes with Wild Blue Yonder. Let rest 10 minutes and carve. Garnish with a few fresh blueberries and pass extra sauce when serving. Serves 4-6
