VERNON'S JAMAICAN JERK SAUCE
Jerk BBQ Meatloaf
• 1 kg. lean minced beef
• 1/2 cup oatmeal
• 2 tsp. mustard powder
• 1 onion, finely chopped
• 1 tsp. salt
• 2 cloves garlic, minced
• 2 Tbls. Vernon's Jamaican Jerk Sauce
• 1 ripe banana, mashed
• 1 egg, lightly beaten
• 3 sprigs thyme, finely chopped
• 1 stalk celery, finely chopped
Combine all ingredients. Shape into a loaf and place in a well greased ovenproof dish and top with 2 Tbls. Vernon's Jamaican Jerk Sauce. Bake at 350 F. for 45 minutes
