ROADKILL BAR-B-Q SAUCE
Beaver or Raccoon Roast with BBQ Sauce
• 1 small to medium beaver or raccoon
• 1/2 tsp. salt
• 1 tsp. instant minced onion
• 1 jar Roadkill Bar-B-Q Sauce
• 1 1/2 tsp. Worcestershire sauce
• 3 Tbls. brown sugar
Cut into serving size pieces and place beaver or raccoon in a foil-lined roasting pan. Preheat oven to 350 degrees F. and roast, covered for one half hour.
Meanwhile, mix other ingredients in a small bowl. After meat has roasted, uncover and pour ingredients over the pieces. Then roast, uncovered, for another half hour to an hour--until tender. Baste several times during cooking, using your barbecue sauce.
