Our Favorite Global Scorchers

Because intensity varies so much from one hot sauce to another, we've assigned heat levels to our favorite hot sauces:
Timid Feisty Yikes! SOS!
We've grouped these sauces in five categories: three regional types (including sauces made in the style of a region but produced elsewhere), scorchers, and wild cards. Choosing our favorites was tough. After polling the experts, we narrowed the list to these top picks. Gotta-try-'em choices are starred.
Louisiana
These sauces are a fermented mash of cayennes or other chile peppers, vinegar, and salt. Most have a strong vinegar flavor.
Iguana Red Pepper Sauce. Tangy-sweet With a complex carrot base.
Spitfire Red Hot Pepper Sauce. Tart with a hint of garlic, Scotch bonnet chili flavor.
Tabasco Habanero. Hotter, more complex, less tart than the original.
Vampfire Hot Sauce. Lemony, salty, good chili flavor.
Caribbean
Sauces in this style are big on fruit or mustard and generally contain habaneros or Scotch bonnet peppers.
Bad Girls in Heat. Sweet, spicy, fruity with papaya, pumpkin, parsnip.
Dat'l Do-It Devil Drops. Tart, with carroty sweetness.
* Inner Beauty Real Hot Sauce. Complex mustard-curry flavor, slightly sweet.
* Jump Up and Kiss Me Hot Sauce with Passion. Fruity curry flavor.
* Lottie's True Bajan Premium Hot Pepper Sauce. Mustardy, tart, hint of papaya.
Matouk's Hot Sauce. Tart papaya flavor.
Latin American & Southwestern U.S.A.
Latin American hot sauces are almost pure chili, though some from Belize have a carrot base. Our Southwestern sauces have a more Mexican style - a little cumin and chilies such as jalapeno (including smoky chipotles) and chili pequin.
* Bufalo Chipotle. Very smoky and rich.
* Cholula Hot Sauce. Great chili pequin flavor.
* El Yucateco (red). A habanero sauce that has a tomato base.
Firehouse Global Warming Tamarind Chipotle Sauce. A fruity tamarind flavor with garlic, and a lightly smoky taste.
Marie Sharp's Pepper Sauce. True, fruity habanero flavor with a carrot base.
* Ring of Fire Hot Sauce. Extremely complex, fresh chili-tomato flavors.
Scorchers
Save these capsaicin extract sauces for cooking.
Dave's Insanity Sauce. Killer hot, slight chemical taste.
Endorphin Rush Beyond Hot Sauce. Killer hot, slight chemical taste.
Wild Cards
As the category suggests, these sauces are all over the map.
Brother Bru-Bru's African Hot Sauce. Generous amounts of garlic and vinegar with heat that sneaks up on you.
Huy Fong Sriracha Hot Chile Sauce. Garlicky red chili flavor, Vietnamese-style.
Poo Khao Thong Sriracha Chilli Sauce Strong. Sweet and garlicky, Thai.
Pure Hell. Fruity pineapple flavor with a kick.
