RASPBERRY SALSA

Raspberry Chicken
• 1 chicken or Cornish game hen
• 1 orange
• 1/2 cup Raspberry Salsa
• Salt and pepper to taste

Wash chicken (hen) thoroughly. Peel the orange and split it in half. Block the neck of the carcass with half of the orange. Fill the cavity with most of the salsa, and seal the opening with the other half of the orange.

Slip a knife between the skin and the breast to separate the skin without removing it. Spread the rest of the salsa under the skin. Salt and pepper the outside to taste. Cook at 325 degrees until done, about 1 hour.
