Slice baguette 1/4" thick on a sharp diagonal to make pieces 3 to 6" long. Reserve end pieces for another use. Arrange slices in a single layer on a baking sheet.
Mix olive oil and minced pepper garlic. Brush oil mixture over bread slices.
Bake in a 350° F. oven until croutons are crisp and golden, 18 to 25 minutes. Serve warm or cool.
