Oops! Beans
• 2 lbs. pinto beans
• Salt pork
• 3-4 cloves garlic, minced
• 1 Tbsp. dried oregano
• 4 to 8 chile pequins or serranos, to taste
• Oops! Hot Sauce to taste
Wash and sort through beans. Put beans and enough water to cover by 4" in a heavy 6 quart sauce pan and bring to a boil. Lower heat to a simmer and add rest of ingredients.
Cook 4-6 hours stirring occasionally and adding boiling water as needed until beans are tender. Do not add salt until beans are done or they will not get tender. Beans will thicken the longer they are cooked.
