Smoked Chicken Quesadillas
• 2 tsp. Mountain Man Hot Sauce
• 1 oz. cream cheese, softened
• 2 flour tortillas
• 1/4 cup smoked chicken, shredded
• 1 Tbls. red onion, finely diced
• 1 Tbls. cilantro leaves
• 1/4 cup Iguana Chipotle Salsa

Combine hot sauce and cream cheese in a small bowl and blend until smooth.

Spread 1 Tbls. of chipotle cream cheese mixture on 1 tortilla. Top with chicken and onions. Spread 1 Tbls. chipotle cream cheese mixture on second tortilla. Place on top of first tortilla, with cream cheese side down sandwich style.

Carefully place quesadilla on griddle or in large sauté pan over medium heat. Grill approximately 2 to 3 minutes then turn and grill other side until lightly browned and quesadilla is heated through.

Cut into wedges, garnish with cilantro leaves and serve with salsa.
