KERALA HOT CURRY POWDER
Meat (Chicken, Beef, Pork) Curry
• 2 lbs. boneless meat
• 4 Tbls. Hot Curry Powder
• 1 large onion, sliced
• 3 Tbls. ginger, chopped
• 3 Tbls. garlic, chopped
• 1/4 cup oil
• 1 cup tomato, chopped
• 1 cup hot water
• 1/2 cup coconut milk
• 2 Tbls. cilantro, chopped
• Curry leaves (optional)
Add curry powder, curry leaves & tomato; fry well and then add meat.
Pour hot water and salt to taste, cover & simmer until meat is cooked.
Stir in coconut milk, bring to boil & garnish with cilantro. Serve with chutneys or curried lemon. Serves 6-8.
