OLD SANTA FE TRAIL JERKY FIXIN'S

Old Santa Fe Trail Jerky
To season 5 lbs. of meat for jerky (can use beef, turkey, or venison)
• 1 Tbls. of salt
• 3 Tbls. of course (not fine) black pepper
• 1/2 pkg. of Old Santa Fe Trail Jerky Fixin's

Trim all fat and gristle from meat. Cut with the grain, into strips 1/4" thick. Drain any moisture and place into large mixing bowl. Add 1 Tbls. of salt, 3 Tbls. of course black pepper and Old Santa Fe Trail Jerky Fixin's. Mix vigorously by hand for one minute. Now it's ready to start drying!

Remove and wash oven racks. Lay strips on racks and replace high in the oven. Leave top of oven door cracked open with wooden spoon handle (very important). Turn oven on "bake" only on "warm." Dries in about six hours. Remove thinner pieces first as they become dry, but still bend without breaking. Avoid over drying. Wash racks after use.
