Pork Stir Fry with Peanuts
• 1/4 lb. mushrooms
• 2 green onions
• 1/4 cup cabbage, sliced
• 1 clove garlic
• 1 lb. lean pork
• 1 tsp. salt
• 3 Tbls. peanut oil
• 1 Tbls. light soy sauce
• 1 tsp. cornstarch
• 1 Tbls. rice wine vinegar, or 1 Tbls. sherry
• 1/2 cup chicken stock
• 1/2 lb. Cajun Creole Hot Nuts, shelled

Wash the veggies, slice the cabbage and mushrooms, crush the garlic, chop the onions, and shred the pork.

Sprinkle the onions with the salt, stir fry in 1 Tbls. peanut oil for 3 minutes and drain.

Mix the pork, soy sauce, cornstarch, garlic and wine/sherry and stir fry quickly in 2 Tbls. peanut oil for 2 minutes.

Add the stock, peanuts, onions, mushrooms, and cabbage. Cook for 2 to 3 minutes.
