Black Bean and Jicama Salad
• 1 lb. can of black beans drained
• 4 cup julienned jicama (about 3 lbs. pre-trimmed)
• 1 large red bell pepper julienned
• 1 10 oz. package frozen corn thawed
• 1/2 cup fresh lime juice
• 1/4 cup olive oil
• 1/2 cup Hog's Breath Hot Sauce
• 1 Tbls. salt
• 1/2 tsp. black pepper
• 1/2 cup chopped cilantro
In a large bowl combine the vegetables and mix. In a mixing bowl combine lime juice, salt and pepper, oil and Hog's Breath Hot Sauce. Wisk to incorporate. Slowly wisk in oil. Just before serving, pour dressing over vegetables and toss well. Garnish with chopped cilantro.
