NANTUCKET RUB
Barbecue Halibut Steaks
• 2-1 lb. halibut steaks
• 2 Tbls. olive oil
• 1 Tbls. lime juice
• 2 Tbls. Nantucket Rub
• Salt to taste
Preheat an outdoor grill for medium-high heat, and lightly oil grate.
Rub 1 Tbls. Nantucket Rub onto each halibut steak. Add olive oil, citrus juice, and a pinch of salt if desired.
Place the halibut on the grill. Grill for 5 minutes on each side or until fish flakes easily with a fork.
Approximately cooking times for halibut:
1/4 to 1/3" thick - 3 to 4 minutes
1/2 to 3/4" thick - 4 to 6 minutes
1 to 1 1/2" thick - 8 to 12 minutes
