FIESTA CHIPOTLE SALSA

Fiesta Fish
• 4 fillets; swordfish, orange roughy, red snapper or cod
• 4 Tbls. olive oil or melted butter
• 1 1-1/2 cups Chipotle Salsa

Preheat oven to 350 degrees. Lightly grease or spray a 9 x13" or 8 x 8" baking dish (depending on fillet size). Place a small amount of salsa in the bottom of the baking dish. Place fish in dish, brush lightly with olive oil or butter. Cover each piece of fish with more salsa (remember this salsa is tongue scorching hot!). Bake uncovered in a 350 degree oven for 15-20 minutes, or until fish is flaky; do not over cook.
