SALSA DEL RIO
Southwest Eggs Ecstasy
• 10 eggs (mix well)
• 1 jar Salsa Del Rio
• 10 Tbls. sour cream
• 2 Tbls. butter
Optional:
• 1/2 cup chopped onion
• red bell pepper
• mushrooms
• ham
• cheddar or pepper cheese.
Melt butter in a 9 x 11" baking dish. Spread sour cream over butter, pour in egg mixture. Bake at 350 degrees F. for 40-50 minutes. Allow to cool 5 minutes, cover with Salsa Del Rio, cut into squares and serve with warm tortillas, toast, potatoes or pinto beans.
