Cajun Creole Jambalaya
• 1 large onion, diced
• 1 large bell pepper, diced
• 4 celery stalks, diced
• 1 lb. smoked sausage, cut into 1/4" slices
• 1 Tbls. olive oil
• 4 cup cooked chicken, chopped
• 3 cup uncooked rice
• 2 cans French onion soup, undiluted
• 1 can each of chicken and beef broth
• 1/4 cup Creole "Shut My Mouth" Pepper Sauce

Preheat oven to 350 degrees F. On stove top, sauté first 3 ingredients in hot oil in a Dutch oven that has a tight fitting lid till sausage is browned. Stir in chicken and rest of ingredients. Cover Dutch oven and bake for 40 minutes, stirring after 30 minutes. Serve with crusty bread and more pepper sauce.
