Cowboy Succotash
• 1 Tbls. oil
• 1/2 cup chopped onion
• 1 (11 oz.) can of corn
• 1 (15 oz.) can black beans, drained, rinsed
• 1 (4 oz.) can chopped green chiles
• 1 Tbls. chopped fresh cilantro
• 1/2 tsp. Chipotle Del Sol Seasoning
• 1 tsp. cumin
Heat oil in a large saucepan over medium heat. Add onion; cook until tender, add remaining ingredients, mix well. Reduce heat, cook until heated through. Stir occasionally. Serves 6
