Caballeros Beef & Avocado Tacos
• 2 Tbls. lemon juice
• 1 avocado, seeded, peeled, and cut into 1/2" strips
• 1 lb. boneless beef sirloin or eye round steak, cut 1" thick
• 1 medium onion, cut into wedges
• 2 fresh poblano or green chili peppers, cut into 1" squares
• 1 Tbls. olive oil
• 1/2 cup picante sauce
• 2 cup lettuce, shredded
• 4 flour tortillas
• Spicy Buffalo Blend to taste

Trim fat from steak and cut into 2 x 1" thin strips.

On four 12" skewers, thread steak, accordion style. On four 12" skewers alternately thread onion and peppers. Brush vegetables with oil.

Grill kabobs on the rack of an uncovered grill directly over medium heat for 10-12 minutes or until steak is done, turning kabobs once and brushing occasionally with the picante sauce up to the last 5 minutes of grilling.

In a small bowl drizzle lemon juice over avocado and toss gently to coat.

To serve, divide steak, onion, peppers, avocado and lettuce among the tortillas. Sprinkle generously with Buffalo Blend Seasoning and fold the tortillas over filling.
