Thai cuisine is light, fresh and traditionally seasoned with chile peppers and aromatic herbs, a gourmet delight for those who know and love good food. It has a temper. It can be as spicy hot (but not as heavy) as fiery Indian food or as gently flavored as Chinese. Happily, Thai cuisine is a pleasant contrast between the two. You can have it "spicy hot or spicy not." You decide.

The secret of Thai cooking is to maintain a delicate balance between the spices and main ingredients so that one does not overwhelm the other. Perfection comes with practice, and tasting; tasting is the key to success. Texture and color contrast is also important. The recipes in this book will show you how.

Thai cuisine is amazingly versatile. One dish can have as many as seven or more variations. Although beef, chicken, pork and seafood are most often used, vegetarian dishes are equally popular. What a fine challenge for creative cooks.

Thai seasonings may seem complex. They're not.
